Get Social This recipe is a staple in our home! It's meaty enough to fill up the whole family, and sweet enough the kids will love it. Goes great with mashed potatoes or stuffing. Of course I suggest adding a healthy veggie on the side! Some folks suggest meatloaf is maybe not a high class meal, but that doesn't mean it's not delicious! ...or affordable, or a great leftover meal. In my opinion all the good outweighs the supposedly bad stigma around meatloaf for supper. This recipe was adapted from a wonderful recipe on Allrecipe. I still remember the day I stumbled upon this meatloaf recipe that my daughter and boyfriend might actually eat! I love any kind of meatloaf, I grew up on it. Not them, they take a little more convincing. This recipe has really done the trick though. I've adapted it a little to our taste and made sure to keep it simple! So let's get to it! Preheat your oven to 350. I refrain from using extra veggies in this, because it gets kind of weird with the sweetness of the brown sugar. In one bowl mix all the ingredients below.
Now if you are one of those people that mix your meatloaf with your hands more power to ya. Thoroughly mix that meat mixture and pretend it doesn't look totally disgusting at this stage. Okay good. Now prepare your bread pan. Pack the brown sugar into the bottom of your pan until it's about a 1/4 inch thick layer. Then cover that layer with ketchup, yup more ketchup :) Now add your meat mixture on top of that. Bake at 350 for 1 hour. Ta-Da! You rock, and your family might actually say thank you for making them supper tonight! Good Luck!
