Get Social My little effort this week to make a better meal for my family was homemade bread! It's not that hard, it's cheaper than you'd think. The best part it's way more satisfying. My favorite part though is that the bread slice does not flop over in your hand like those cheap white bread bands. The recipe that I use is as follows: Baking & Spices 1 package Active dry yeast 6 1/4 cups All-purpose flour 1 tbsp Salt 3 tbsp Sugar Oils & Vinegar 2 tbsp Canola oil Liquids 2-1/4 cups warm water I also sprinkled a little basil over the top right before I baked it.

This meal was pretty much ALL homemade and I'm really proud of that part! This started when whole chicken was on sale at the grocery store and I had to figure what the hell to do with it once I got home. Of course I could do the classic baked chicken and roasted veggies... But mehh I always do that! Boringggg, and I like to surprise my boyfriend with new dinner recipes sometimes ;) THE CHICKEN: So for the chicken I actually pulled the recipe from blog 'A Tasty Challenge'. http://atastychallenge.blogspot.com/2012/01/stove-top-whole-chicken-with-vegetables.html?m=1 although I did adjust the marinade to the spices I had available in my cabinet. Just to give you a quick overview of how to cook the chicken, I actually cooked the whole chicken in pan on the stove top. After the chicken has marinated for a couple hours you put it in a pan with some oil or butter on medium high heat. Cook the chicken until slightly fried on each side.. Yeah you do have to flip the chicken (I had my boyfriend do this part!). Once all sides are slightly fried add the water and turn down the burner to about medium low, cover the chicken and cook to 160 degrees this takes about an hour. Let the chicken cool a bit and carve! Here's a roll of pictures below of the process. You'll notice the 'cover' for the chicken is just tinfoil.. Who has a pan/cover to actually hold a whole chicken? I know I don't! THE RICE: So this part is not all homemade :/ the rice is rice in a bag and it cooks in like 10 minutes. Once it cooked I sprinkled in lemon juice and salt to taste. After that I walked out front to my little flower/herb garden and plucked some fresh green basil. I cut that up and also mixed it into the rice. Soooo see the rice side dish is not all that bad! THE CORN BREAD: This recipe I pull from Allrecipes and its called 'Sweet Corn Bread'.

This recipe came about because of my kitchens lack off eggs. Also I love cornbread and crave it on the daily.
This recipe is perfect because one it's so easy... literally 2 steps. The little apple sauce cups you add to it are that health choice you make in the grocery store and then just never eat it. At least I don't, I like to think my daughter likes them but no luck there!
Mix and bake per the same directions on the Jiffy Muffin Mix box and enjoy! |
