Get Social This recipe is a staple in our home! It's meaty enough to fill up the whole family, and sweet enough the kids will love it. Goes great with mashed potatoes or stuffing. Of course I suggest adding a healthy veggie on the side! Some folks suggest meatloaf is maybe not a high class meal, but that doesn't mean it's not delicious! ...or affordable, or a great leftover meal. In my opinion all the good outweighs the supposedly bad stigma around meatloaf for supper. This recipe was adapted from a wonderful recipe on Allrecipe. I still remember the day I stumbled upon this meatloaf recipe that my daughter and boyfriend might actually eat! I love any kind of meatloaf, I grew up on it. Not them, they take a little more convincing. This recipe has really done the trick though. I've adapted it a little to our taste and made sure to keep it simple! So let's get to it! Preheat your oven to 350. I refrain from using extra veggies in this, because it gets kind of weird with the sweetness of the brown sugar. In one bowl mix all the ingredients below.
Now if you are one of those people that mix your meatloaf with your hands more power to ya. Thoroughly mix that meat mixture and pretend it doesn't look totally disgusting at this stage. Okay good. Now prepare your bread pan. Pack the brown sugar into the bottom of your pan until it's about a 1/4 inch thick layer. Then cover that layer with ketchup, yup more ketchup :) Now add your meat mixture on top of that. Bake at 350 for 1 hour. Ta-Da! You rock, and your family might actually say thank you for making them supper tonight! Good Luck!

Here is a solid budget dinner recipe. It's cheap and easy because the point is to use what is leftover. You know, the day before you go grocery shopping and there is just nothing good to eat. Turn here my friends, I got you. This is what I did however, use your own creativity here. Needs:

- Spices should really be up to you, but that is what I used :) Okay chop all that stuff up, throw it in a pot. Mix. Pause. *Take a hit or sip of your favorite substance. Okay get back to it... Mix until it boils. Turn it down cover it until is smells really gooood. *If it doesn't smell really good try adding different flavors, just don't get to out of hand. My first priority is that they are healthy recipes. You could say I'm starting a clean eating regimen, however my body just needs good food. Simple as that. These recipes also have to be filling, and something different! I'm getting sick of the basic healthy recipes. I wanted to hopefully inspire others on a new healthier menu for at least the first week of the new year! #1 THE EASY MEAL: Cranberry Walnut Chicken Salad - This recipe can originally be found on my 'Healthy Eats' Pinterest Board too! :D I picked this one because it's a healthy chicken salad with a winter palate. The walnuts and cranberries also have some great health benefits. Walnuts are full of omega-3 and so improve heart function, bone health, and metabolism. They taste really good too. Cranberries bring a whole other element to this chicken salad with their color! Oh, and cranberries are ranked as one of the healthiest foods in the world. Honestly there is so many good things cranberries do, I'm not going to type it all up. Google it :)*Explain why I personally picked it. #2 Get Into It!: Skillet Style Kale, Shrimp & Sweet Potato Stir Fry - Where do I start? Well first off shrimp is a great lean protein, and I LOVE the flavor. Shrimp is by far my favorite seafood. Then there is kale, one of the superfoods. Sweet potatos are delicous & healthy too! I think this is a great idea for something different, but still healthy for all body/diet types. #3 Keep It Up: The Spicy Chicken Taco - Yum and a half on this one! It's like healthy food getting a junk food lease on life. I don't know, but all those flavors have got to taste good together. The hot spices will help your circulation, like paprika and cayenne. We all know chicken is the healthier white meat. So all around this is a win! #4 Get a Little Fancy: Pita Tostadas with Butternut Squash, Black Beans & Avocado - Look at this beautiful pita! I found this on one of those clean eating feeds on Pinterest. It was right at the beginning of a great "Pinterest hole". lol... you know when you find something amazing and then scroll down, and then find something else amazing, and then realize you spent like an hour looking at healthy recipes with avocado topping. Anyways I think it's worth a mention how beautiful and unique this one is, and yet still incredibly healthy. The butternut squash offers a good dose of daily dietary fibers, as well as high levels of pottassium. While it's true that litrally all the ingredients on this pita are nutritional, I'm only going to mention one more. The avocadoooo! I love avocado on anything, but most importantly avocado is extremely high in nutritional value. It is widely considered one of the super foods for it's benefits. Don't forget to click on each image to get the original recipes! #5 The Last One is the Sweetest!: Healthy Hazelnut Nutella Fudge - This only has 3 ingredients. These little treats look decedant, and contains only Nutella, Coconut Oil, and Cocoa Powder! I was most excited about the addition of the coconut oil. Coconut oil has so many benefits, more than any other thing on this list. It's great for your complection, boosts immune system, lowers blood pressure, and cholesterol. Coconut oil taste great and provides us with the RIGHT fatty acids. I love coconut oil, can you tell? Get Social I love that this chicken soup is so simple. It really just came about a cold snowy night, and no one was going to the grocery store anytime soon. So I compiled what we had into a pot and ta-da! Delicious simple 3 ingredient chicken soup. I figured this could be a great staple the week before Christmas! Yes folks we are in major countdown mode... 5 days until Christmas morning and my 2 year old runs out to open her presents (I can't wait for that part :). 5 days until all the family is here, 5 days to prepare food, gifts, decorations... Not trying to stress anyone out or anything! My point is a simple soup that keeps great for leftovers is perfect for a pre-holiday dinner. So here it is, enjoy! *I prefer to add some spices: so if you choose add to taste Italian seasoning, S&P. Boil the chicken breasts covered by water the whole time, in a slow cooker or large pot. Boil the chicken for about 20 minutes. Enough time to wash and chop up the potatoes, then add all the potatoes to your pot as well. Keep them at a slow boil for 45-55 minutes, then add your frozen bag of peas. Just dump it in there, mix it up, and boil for several more minutes. I like to slow cook off my soups, so once it's done turn it down to medium-low for another 20-30 minutes. OH! the spices. According to www.spiceadvice.com
So even though I honestly forgot to add my spices until the very end, it is the best way to do it! Perfect... I love it when things actually work out like that. I hope my simple soup saves you some time this holiday season. Happy Holidays! Get Social My little effort this week to make a better meal for my family was homemade bread! It's not that hard, it's cheaper than you'd think. The best part it's way more satisfying. My favorite part though is that the bread slice does not flop over in your hand like those cheap white bread bands. The recipe that I use is as follows: Baking & Spices 1 package Active dry yeast 6 1/4 cups All-purpose flour 1 tbsp Salt 3 tbsp Sugar Oils & Vinegar 2 tbsp Canola oil Liquids 2-1/4 cups warm water I also sprinkled a little basil over the top right before I baked it. This meal was pretty much ALL homemade and I'm really proud of that part! This started when whole chicken was on sale at the grocery store and I had to figure what the hell to do with it once I got home. Of course I could do the classic baked chicken and roasted veggies... But mehh I always do that! Boringggg, and I like to surprise my boyfriend with new dinner recipes sometimes ;) THE CHICKEN: So for the chicken I actually pulled the recipe from blog 'A Tasty Challenge'. http://atastychallenge.blogspot.com/2012/01/stove-top-whole-chicken-with-vegetables.html?m=1 although I did adjust the marinade to the spices I had available in my cabinet. Just to give you a quick overview of how to cook the chicken, I actually cooked the whole chicken in pan on the stove top. After the chicken has marinated for a couple hours you put it in a pan with some oil or butter on medium high heat. Cook the chicken until slightly fried on each side.. Yeah you do have to flip the chicken (I had my boyfriend do this part!). Once all sides are slightly fried add the water and turn down the burner to about medium low, cover the chicken and cook to 160 degrees this takes about an hour. Let the chicken cool a bit and carve! Here's a roll of pictures below of the process. You'll notice the 'cover' for the chicken is just tinfoil.. Who has a pan/cover to actually hold a whole chicken? I know I don't! THE RICE: So this part is not all homemade :/ the rice is rice in a bag and it cooks in like 10 minutes. Once it cooked I sprinkled in lemon juice and salt to taste. After that I walked out front to my little flower/herb garden and plucked some fresh green basil. I cut that up and also mixed it into the rice. Soooo see the rice side dish is not all that bad! THE CORN BREAD: This recipe I pull from Allrecipes and its called 'Sweet Corn Bread'.

This recipe came about because of my kitchens lack off eggs. Also I love cornbread and crave it on the daily.
This recipe is perfect because one it's so easy... literally 2 steps. The little apple sauce cups you add to it are that health choice you make in the grocery store and then just never eat it. At least I don't, I like to think my daughter likes them but no luck there!
